Banana bread recipe

Bananas are a tricky thing. You either have way too many or not enough. And they are either too green or too ripe, maybe with an hour inbetween when they are just right.

I've made banana ice cream and smoothies until it came out our ears, our freezer still has a few frozen bananas hidden away somewhere. It was time to move onto something else.

This recipe really is the one that banished all my previous banana bread disasters. It's easy, not too dry, not too moist, just perfect. I've even frozen one and it was still great.

500 ml flour
200 ml sugar
5 ml Baking soda
2.5 ml salt
125 ml oil
2 eggs
3 ripe bananas
5 ml vanilla essence
(If you want you can add some chopped walnuts as well)

Preheat oven to 180 degrees celsius And prepare your bread pan. 
Sift all the dry ingredients together. (Flour, sugar, baking soda, salt)
Add the oil and eggs.
Mash the bananas and together with the vanilla, add to the mix and beat well.
(If you are using nust, add them now)
Throw the mixture into the pan and bake for 50-60 minutes.
