Dairy free Peanut butter fudge




I started this new year with a few dietary changes. One of them is giving up all dairy products. I was really apprehensive since I pretty much have dairy with every meal. My biggest concern was that I have to give up all my favourite desserts. 

But thanks to pinterest I'm no longer worried! There are a so many options to replace your usual dairy-favourites, it just takes a bit of experimenting.

This fudge is melt-in-your-mouth heaven! I used honey, but you can replace it with maple syrup if you want a vegan option. I added a bit of roasted coconut flakes, because they are amazing and no meal should ever be without it ever again! Add some chopped nuts, berries or even oats.

Dairy Free Peanut Butter Fudge
Ingredients
  • 60 ml Coconut oil
  • 90 ml Peanut butter
  • 2 tbsp Cocoa
  • 30 ml Honey
Instructions
Melt the coconut oil in the microwave or over a double boiler. Stir in the peanut butter (I used crunchy, it was perfect!), cocoa and honey. Pop in the fridge and wait for it to cool into yummy fudge. Or eat it as is, it doubles as a delicious sauce as well!
